For many years my life has revolved around restaurants.

They demand everything — your time, your attention, your energy. And when you care deeply about what you do, you give it willingly. But restaurants, by their nature, can become all consuming, leaving little room for the many other things that inspire and sustain creativity.

Right now, I find myself in between chapters.

As one chapter closes, I’ve given myself a little space to explore what the next one might look like. Not to rush into another fixed shape, but to follow the things that have always sat alongside cooking — writing, travelling, gathering people around tables in unexpected places, thinking about design, objects, ingredients, stories and the rituals that surround eating together.

For now, this means creating a series of small, thoughtful food experiences. They might take place in a tiny dining room, a barn, the back room of a pub, or perhaps even on a beach somewhere. The details are still taking shape. Plans and dates will follow.

In the meantime, I’m sharing the process here — the thinking, the menus, the ideas, the places and the people who are helping shape what comes next.

Cooking will always be at the centre of what I do.

But life, like creativity, rarely sits neatly in one category.

And so this space exists for all of it.
